Pretty basic question but how do I assign East, North, South, West to my elevations? Thank you!

I still don't get it.  What do you mean by "ASSIGN"?  "Assign" as in designate or set?

Your Model Views are looking at the Building Model from different vantage points. The building model is oriented to a compass direction already.  Are you wanting to change its orientation?  If so, to Project North or True North?

What I'm asking is how do I change the default so that North is at the top? Right now it defaults to West at the top.

Remove the Angle to True North from the Project Base Point then.  If the Angle to True North is correct, then you can switch between True North and Project North by toggling the Plan Views' Orientation Parameter on the View Properties.   If neither of those work for you, I suspect you Rotated Project North. Rotate Project North 90 degrees counter-clockwise.
