I wanted to create a floor system that would allow lighting fixtures to attach to the underside but cannot without going and adding a ceiling to the room first. Is there any way to create a floor system that shows gyp bd below (the ceiling of the room below) that will allow lighting fixture to attach to it without having to go back and add a clg to the room?

You can add the gyp ceiling to the floor assembly.
You can use face-based light fixtures / or non-hosted fixtures to place on the gyp. bd. "ceiling".
Well, if you do that then you may need to do this.

All fixture under Revit MEP library are faced based. If you use families from manufacturers then they are face based too. Only fixture under Architectural library are ceiling based.
I would try those before putting the efforts in converting families.
