If you select the object you want to rotate around and then use the 3D ORBIT, it will make that object the center of the orbit. Hope this helps.
Is it that the sensitivity is too high...such that one inch of hand movement makes the model rotate three times around? Or is it just steps instead of smooth movement?

refer to the first reply to this thread - this explains how to get the 3DOrbit command to work as you want. Revit won't automatically target the center of the geometry you see in the view (which is a shame IMO).
Might I also humbly suggest that it might be worth going on a Revit course or doing some onlne tutorials to improve your skills? This should help improve your efficiency whilst addressing a lot of the questions you have been asking on here.

I'm just thinking you might cover a lot, quicker if you took a few days out to do some structured training.
It's up to you obviously but I know many people have found this to be a productive course of action.
I have the issue where a tiny movement of the mouse in 3D orbit moves the project massively. Is there a way to slow the movement or alter the sensitivity
