you could also use video, but you should extract video frame first. However, be aware that video usually has motion blur, so you should collect only the sharpest frame.

If the camera is shooting in high quality and also has optical image stabilization and in addition you have a steady cam then yes.
The work of extruding frames from the movie as @ValerioRizzo is a lot of work and it can be tricky.
So to be honest I think it is still just better and faster to make all the images by hand with a camera.
This way you have control over each photo (sharpness - in focus - framing) and such.
Based on the object you want to digitize sometimes only few images are needed like 40 to 60.
