Hi there! Does anyone have a solution to this issue I've been having? I just want an edge between the two selected vertices so that when I do fill hole it doesn't appear like the second image. I'm attempting to create a western saloon so I need the roof to be flat.

bridge the 2 edges of the flat part first (but remove that vertical edge before) and than use fill hole on the remaining hole.
or keep what you have and either "connect components" with both verts selected or do it with the multi cut tool.
then there is most likely something wrong with your model. taking a closer look it seems like you have/or are about to create at least some nonmaifold geometry here for example
also is this just pre-selection highlighting or is that edge actually selected?
last but not least i meant to remove only the marked edge not all of them.
