Modeling with a camera?

Hey guys... So I am modeling an environment and usually, I get some basic blueprints, line them up as image planes, and go for it. This time, the images I got were from various perspectives of a room. I ended up using something called fSpy to help pin down some camera coordinates, and then I loaded the image plane and locked the camera. From there, I started modeling in the perspective view while looking at the camera view and seeing everything lined up. The problem started when it came time to move a vert... The gizmo does not like the angle that I am modeling from. I go into the options and try to set the gizmo to the orientation of the model's angle and it works, but will not keep the orientation remembered. That means that with every extrusion, slide, or movement of any kind, as I model this stuff, I have to remind it of the orientation. It's starting to be a real pain and I feel like there has to be something that I am doing wrong. I just spent 4 hours modeling a closet/shelf from some Cyberpunk room, which is actually something that I should have been able to do in an hour or less (if the references were flat it would be even quicker). It's so odd that the tools are acting finicky. If I wanted a tough time, I would just use Blender, lol. (That software claims to be friendly for Maya users, but I noticed there are extra steps to doing stuff that is so quick in Maya, so I closed that one up years ago and never looked back)
Anyways, could this be an odd glitch in my prefs? or... Am I doing something wrong?
