FBX Import and unable to apply UVs

Okay, so I have a model with all of the texture data and even the old UVs, however when I make a change to the UVs, it does not reflect the change, i.e. the model stays the same. Any help would be greatly apprectiated. Thanks

depending where the fbx comes from it happens quite often that it has multiple uv sets. also happens that they are named different than the maya default one. map1 or uv_set1 (at least something like this) are often the default. get rid of the others if not needed and copy the uv´s you need to the default uv set if you want to preserve something. if you keep more than one uv set you need to use uv linking.
