What PC Hardware is best for Modeling and Rendering in Maya?

I'm currently using Maya to model high poly assets and render realistic scenes. I am planning to build a brand new PC that is optimized for Maya modeling and rendering (and some gaming). My budget is $4000-5000

 

My current PC specs:

Gigabyte Z370 Motherboard

EVGA GeForce GTX 1080Ti FTW3

Intel i7 8700K

32GB DDR4 RAM

2TB SSHD

 

When I think about new PC components for 3D design, a few questions come to my mind. Is it better to get an NVIDIA Quadro GPU for rendering (not optimized for gaming), or an RTX 2080Ti (optimized for gaming) for 3D (ray-traced) rendering in Arnold? Should I get an Intel i9 10980XE (More cores, good clock speed), or an Intel i9 10900K (Optimized for gaming, better clock speed) for 3D modeling and design? I also plan on getting 64 GB RAM (2x 32GB, or 4x 16GB) and a 1-2TB Samsung EVO SSD for the operating system and all my files. I am going to be using the new PC to model high poly assets, animate and render super fast in Maya, composite in After Effects and Nuke, and still play graphicly intensive games at max settings at 120fps in 1440p.

 

I'm not sure what hardware to choose. If anybody could give me any suggestions or recommendations, I would appreciate it. Thanks
