New user, two retopology questions.

Hello and thanks for reading my post. I will try to keep this short and to the point. I am a new Maya user. For now, I mostly use it for retopology. I previously used Topogun 2.0. There are two things that I was wondering about in Maya.
First, is it possible to load a new sculpted mesh under old retopology? I do work on meshes that are extremely (98%+) similar and don’t want to redo everything from scratch every time I make a change. What I used to in Topogun is I would retopologize a mesh up to a certain point. I would save that project as my master template. Whenever I made a slight change on my sculpts (also from a template) I would simply use the Reload Mesh feature in Topogun to load in the new mesh and the topology would fit and match. I would complete what I needed to do and export out the new, slightly changed, low poly mesh. This workflow was a huge time saver. Is there something like this feature in Maya?
Second, Topogun 2 has a button called Zero Symmetry. I never did my retopology with symmetry or mirroring active. I would retopologize the mesh up to as close to the mid-line as I could get, then I would press the zero symmetry button to ensure that the center border edge is actually at the zero point and then I would mirror the topology to the other side. Is it possible to do this in Maya, or does it have another process?
