In Maya,
After animation is complete with the low rez model, how does one usually go about swapping that out for the high rez model ?
Both geometries are bound before animating begins..

I typically have both the low and high res geo ready to rig. Start with the low res just because it's easier and lighter to work with. When finished, transfer the weights to the high res. Tweak whatever needs fixing. And then setup a resolution switch to toggle between the 2 resolutions.
