How to add more "control joints" to a (1) geometric shape?

So, the title may not make any sense, but this is my first model in Maya, and, to be honest, my first actual model, ever.

I'm trying to make a LEGO character without any textures or clothes, just for rigging him up and animating him - then sending the animations over to other LEGO characters which will take place in my game. I have the whole model, and each body part is a seperate piece - just like a lego figure. Currently, I'm trying to add different joints to my characters to make them not only seem like LEGOs, but also seem real. (I know for a fact this type of animation is used in LEGO SW: The Force Awakens, I'm not sure about other LEGO games as I haven't played any for quite a while.)

Here is my problem:

As you can see, the only joint that turns the leg is the top joint. The rest, completley unresponsive. And that's fine, all I need is for the blue joint, the knee joint, to bend and morph the leg, so it looks like an actual leg rather than a piece of LEGO. How could I do this? Do I need to make a separate part for the lower part of the leg?

My joints are bound to the leg using Smooth bind skin.

Thanks for any help I could recieve!
