is it possible to move the point where the stress is acting from the centre of a face, to closer to an edge?

An example; if i were to model a beam, which has been fixed to the wall at one end, and show the force given by a weight hanging off the free end - how would i do this? When I apply a load, the load shows as acting on the centre of the face, which in the example, is incorrect.

The usual practice is to Split Face.

Attach your *.ipt file here if you can't figure it out.

I'd appreciate it if you could show me please.

You can make the Split Face feature any size or shape or location desired.
