Do you plan to weld it together before rolling it? If that is so, you need to derive the assembly into a part and select multiple parts and merge them to one solid.
on the screenshot below I derived the whole assembly and connected it appropriately to unfold the whole thing.

In this question now, there are several plates in diameter.
I couldn't apply the same idea.

I'll attach the project. I don't have the option to record.
The workflow is as follows:
1. Derive the assembly into a part. Select all solids. If you want to keep colours, make sure to select the highlit option. Otherwise you can choose the first option where it doesn't keep edges.
2. Each individual ring needs to have an opening, or they won't be able to be unfolded. You can't use rip if you keep edges, so instead I'm using a "pizza slice" to make sure I cut perpendicular to the plate thickness
3. Now you need to connect the three layers, because sheet metal will only unfold anything that is connected properly. If you don't do anything, you'll get an unfold that looks like the first screenshot.

Yes you can.
The method with model states works regardless of the number of plates. The way we create states for flat patterns and connect them to assembly state remains unchanged.
The only difference is the number of clicks you have to make.
Since you have more plates, you will have to define more join/constraints. You have to sit in front of the screen and click - that's the whole art.
