Can someone explain to me to pros and cons for both embedding and linking of excel files

Hi, if you are going to embed an excel file, it will be safer to work, it will be inside your part file for example and you won't have to specify a path for it. As against your file it will be heavier, and if you have used the same excel in more than one file, you must open each part and update your excel file embedded in it.
If you are going to keep an excel file linked externally, your part file will be lighter (for not having the excel file embedded). But you must be very careful with the file path, if you modify its name or location you will have an error when not finding the excel file and you must update the path of your excel file. The good thing is that you can use the same excel file to command many different parts and assemblies.

Can an embedded spreadsheet be modified outside the Inventor model or only inside the model ??

A embedded spreadsheet is still an excel file.  When you modify it, it opens in excel.  The difference is that the modifications are related only to the model it is embedded in.
