Hi, how can I set the display, or colors to this?

Presentation looks close to that but its an off-white. I think that is a custom setup - which you can make here:

Can you be a bit more specific?

You just looking to change the background color in Inventor?

Or something related to the selected part edge highlights? a specific color to them or something?

Maybe just unchecking "Enable advanced highlights" from tools..application options..colors tab is what you are looking for.

When I make an assembly, or part, the colours are this:

 But I want this:

 I dont know, how can I set the colours to this. I have a Quadro M4000M.

Are you ONLY talking about how your background is gray and their background is white? (if so go to tools..application options..colors tab and select "Presentation" as shown by @gcoombridge  above. 

Or are you asking how to change the colors of individual parts? if so open the part and select a new color from the appearance dropdown menu in the quick access toolbar
