I am trying to set up my drawing template to a default text. However, after using the styles editor to change my text, every time I go to dimension something, I have to go to the drop down menu to select my style. I want to make it to where I don't have to select the style every time I dimension.

I think what you're looking for is the Object Defaults collection in the Styles Editor, this controls the style and layer that the given object uses by default, so you want to change that for the various dimension styles so that it uses your new style.
