Anyone have a solution for when changing roads created by the model, to design roads regarding there profile elevation changing?

Select the Road, right-click, then choose Convert to Design Road.  After that, you can edit it as a design road.

It sounds like the problem is that once the roads are converted, the PVIs are slightly different, and in a lot of cases, PVIs are actually added.

As for converting plan roads to design roads, you can do that in a semi-automatic way. See the screencast below

Hi @oriole_phillips,

Can you share a screen-shot [or 2] of 'before and after' when converting Model Builder roads from Sketch to Design? I have seen this behavior, but not with Model Builder Sketch roads.

I've had a similar problem, when converting a "model" road into a design road. The horizontal geometry stays the same but the vertical is often skewed drastically, usually sinking into the ground by 20 feet or so. It doesn't happen very often so I hadn't looked for a solution. Usually if I'm going to convert a road into a design road, I'll be adjusting the profile anyway, so it doesn't bother me that much.
