Override Category/elements just overrides the one you've selected(irrespective of its parameters).

 

If you have a model with 2 wall types from 1 wall family & want to change the visibility of just 1 wall type, filters are the best option. If you override the visibility by category, it overrides the whole family. But if you use the filter tool, you can choose different parameters of the family(thickness, type, length etc..,). 

 

In short, the filter tool is a smart way of overriding visibility using the family parameters instead selecting elements. And the filter tool resides within the view template. So you don't have to worry about finding the element to override it. You just have to know the category of the element you want to override.
