Ouch! Depending on the number of welds, this could be a length and time consuming process. You will probably be using sketch and feature creation for all of them. You might be able to create some weld bead components and then add them to your assembly but again, I think this will be a time consuming process.

If you are referring to modeling the individual weld beads, yes, that's possible. Albeit, rather tedious!
If creating welded assemblies isn't your day-to-day bread and butter work, then it might well be worth it.
Could you explain me how to do it?

If you are looking for specialized tools for the purpose, you will need Autodesk Inventor Professional.
This is a very time consuming process but my idea is to create a Weld component and place it wherever you need it. In my return assembly I have only place four 6mm fillet welds and locked them in with As-Built Joints. By the way, I activated your Capture Design History, where is yours? Model is attached.
