There are 2 steel appearances that keeps appearing even though one of which is not assigned to anything. Attempting to delete any of them cause fusion 360 to give me around 20 error messages all of which are the same stating that they are both default appearances.

You do not give enough information to try and help.  One, you do not mention, or give a screen capture of the steel appearances giving you issue.  Two, you did not attach your model so the Forum users can troubleshoot it.  If you do not know how to attach your Fusion 360 model follow these easy steps. Open the model in Fusion 360, select the File menu, then Export and save as a F3D or F3Z file to your hard drive. Then use the Attachments section, of a forum post, to attach it.
