Hey Jeremy,
We never delete your data regardless of whether your license is active. If you renew your subscription you should have everything you left on the cloud.
To add to what @jodom4 said, if you use the same Autodesk ID you used in your earlier Fusion 360 license to create your new subscription, your files will be available.
