The video you are watching is using the old Fusion 360 UI. The Model drop down has been changed to the "Design" drop down. This environment is available in all license types.

It depends on the creator of the videos. Some of my older ones show the older interface also. I direct you to the Autodesk Fusion 360 tutorial page. I will not guarantee these are all up to date but they will be closest. Please select the Accept Solution icon if this answers your question, ask if you need further help.

I would suggest you watch this YouTube video or a similar one to get a feel for the change and then all videos will be useful to you.

Once you look at the video on the UI changes, you will be able to watch most an video, or sort through them yourself. The change happened in late 2019, I think, so sort your videos to around that date.
