For example, when you look at the density of 5052 aluminum under Physical Materials, it shows as 2.68g/cm³. when you then go to the properties of one of your components to check it's mass, the density is listed as 0.003g/mm³. I don't know if it's rounding up when it measures or only when it displaying the "density value". It also shows the mass in grams even if it's over 100kg, and the volume in mm³, which is often in the 10s of millions.image.png

Also, is there a way to see the properties for multiple sub-components, but not the entire assembly? I've found that isolating a some of my components and then clicking properties of the top level component still includes the mass of things that were not part of the isolation, and shift selecting multiple components then going to properties only shows it for one component at a time. I can write the masses down one by one and add them up, but come on Fusion!

Property units are governed by the Document Unit Setting.  It can be set permanently in the Preferences or per model using the Document Settings.

As far as I know, you cannot select multiple bodies or components and get a listing for their properties.

I suppose that technically is the closest answer, but that's really unfortunate. If I set it to cm, I get reasonable units for density, but the mass is still in g instead of kg, and now my sketch dimensions are also in cm instead of mm.

Is there maybe a better way to get information about the mass of various parts or assemblies in my designs?

I believe a good answer to your last posted question can be found if you create a 2D Drawing of your model.  You have to pay attention grouping because if you top level assembly contains sub-assemblies the listing will be organized differently.  The video will show the process on a top level assembly WITHOUT an sub-assemblies.  I wanted to keep it simple for this video.

One of the main features of this method is the ability to change your mass units at once to a variety of formats and export them to a CSV (Excel) file.  This is all in the video.

I know this topic is closed and a solution has been assigned but you asked for a better method of displaying and controlling units of mass.  I supplied a video of doing this in the 2D Drawing environment but I never heard you thoughts on the process I outlined.  Do you think this is a good process?  Does it meet your needs?   Just a little feedback really makes me feel that my efforts were not totally wasted in answering your secondary question.
