How do I make the grid indefinite?

I haven't done any modeling since college (around 4 years ago), and I thought whenever I worked with it in class the grid would just go out indefinitely with increments changing orders of magnitude as you zoomed in and out to stay reasonable. On this though, the grid stops after just two major increments, anything bigger than 50 cm ends up off the grid. Is there any way to make the grid continue out?

The sketch grid is dynamic.  If your sketch entity exceeds the existing sketch grid, it expands dynamically as needed.

Interesting. Is there no preference setting anywhere to have it fully extended at all times? I couldn't find it anywhere. Or do I just have to get used to it?

I am not aware of any Preference setting.  As you use the sketch environment, you will always have a grid under you sketch so you will ignore how it expands.
