can't get out of simple view when sculpting..

simply, using sculpting, hit "Option 1 " (control doesn't wok on Mac as it's described) goes into the blocky simple mode, but now can't get out.

Control works for me on a Mac.  It's actually the 'control' key not the 'command' key, so control+1 is box mode, control+2 is smooth+scaffold, and control+3 is smooth mode.  There is also the Display Mode command under Utilities, as another way to control this mode.  See the screencast below.

However, what you are experiencing might be an error in your form.  If the smoothing algorithm hits an error, it will leave your model in a blocky form.  Would have to see the model to be sure.

aahahhhh. it's the "and 2" or "and 3".  I kept thinking it was control(option) and 1 for in and out.. guess I need to pay attention to the video closer. :/.  LOL  thanks..
