I find myself having to request your support for the 2D part again.

How can I use the Balloons instead without the numbering, but linking them to the component name? I am aware that you can write a test, but I wanted to make it as simple and automatic as possible.

I attach image left as it is now and on the right what I'm looking for.

Fusion 360 does not have the ability to create balloons as you desire.  The best you can do is to use leader notes, which are manual and do not have the box around the note.

This is a real shame as many parametric programs have this choice. It would be an important feature for the future. Isn't there a plugin that can help me?
