Fairly new to 3d modelling, and might have come over a bigger project than I can handle.
I want to design my own backgrounds for aquariums, something like : 
Anyone have some info or guides about how to go forward?

Fusion 360 is not the right software to do create that sort of geometry!
Blender is much more suitable for that purpose.
There are a number of tutorials available on YouToube on how to create rocks for Blender.
