as far as I know, this is not possible, at least with the native product. There may be some add-ins that can help with this, but today, the hotkey system is bound to only commands in the toolbar, and Isolate/Unisolate are context-menu commands.
If you have a Logitech mouse, with extra buttons such as the model M510, you can download their Setpoint application and assign one of these buttons to the Isolate and Un-isolate commands. This has work for me well for this process. If you do this, on my system Ctrl (Windows) + I starts the Isolate command.

Thanks. I also downloaded the Anyshortcut add in, and was able to program it. That is really helpful for sure. It would be a nice improvement to have this native to Fusion 360.
