It is a multi-step process but easy to do. I created a Screencast on a model I created similar to your. At the end of the video I mention you can remove the alignment of the section view if desired by pressing, not holding, the shift key as you drag. I used an ASME template but the process is the same for an ISO template.

But it is a quiet complicated way, I hope Fusion 360 team will make a better solution for that.

maybe I found a better solution for creating perpendicular section views.
The clue is to make a sketch in the design environment where you can use a more powerful skatch featurest.

Yes, I have used this technique also especially for creating special dimensions that do not have snap points in the drawing environment. Here is a link to my blog article and video talking about these. I hesitated suggesting this method before because many users do not want to return to the modeling environment to define geometry that can be used in the drawing environment. I can see you are open minded about this method. I am impressed you worked at it to find another option.
