How can I split the body of a mesh in only a small section?

I have a laurel wreath model I need to split into thirds and the split body function wouldn't be optimal. I only want to cut the stem of the model while leaving the leaves intact. Furthermore, I'd prefer to make the cut in a "V" shape.Original model.Preferred way to cut.Probably easier but less optimal way to cut.

With a mesh your options are limited. I would have designed this with Solid tools from scratch. Shouldn't take long because it's mostly pattern and mirror.

If you are insisting on editing this in Mesh environment; Modify > Plane Cut will cut by planar face only and it will also cut the leaves, so you need you Combine afterwards.

I see its possible to cut as you have shown in image.
