Take a look at the Screencast to see how to make an older version the current version. As for the deleting of older versions, it is not possible UNLESS you want to open the component or assembly and Save As to create a new named component or assembly and then delete the old file completely. The Save As file will be version 1.

That would be really great... except the promote button is not there when I hover over old versions. I just get the three dot menu, and Open or Copy Version options.
Fusion did something funky and rolled back to the initial sketch when I closed a nearly complete v6 the model, and saved that as v7. So the Drawing updated and shat itself. The old version 6 is still there, so I can use it... but it's a hassle re-referencing everything when the whole point of having versions is so you can go back to them when you need to?
Promote functionality is still there, it just behaves a bit differently. Open version 6, then, under the file menu you should see "Save as Latest Version" or something similar. That will save V6 as V8, and you should be back to what you expected.
Now, the problem that happened where the design rolled back to the sketch in V7: Is the rest of the timeline still there? It might be that you just need to roll to the end of the timeline to get your design back to where you want it.

I ended up finding the 'save as latest version' by right clicking in the tree.
I think what happenned with the weird roll-back was that the file closed before it saved or synced or something. There was no timeline, nothing to suggest there was anything other than an incomplete sketch.
