Complete noob here, how do I cut something here so I can stand it up on something and it be on an angle? I'm assuming two distance chamfer but it seems to want to go all around the object.

Chamfer, Select one Edge. Sounds like you selected the Face.

or Draft will do it.

or sketch a triangle and extrude cut

or Sweep,
