Hi,
Canvases are fixed to a plane (e.g. XY) or a body surface and can therefore only be moved on this plane.
A shift in Z is done by shifting the plane or the body surface in this direction.

Here you go! Thanks for the reply. I would also like to ask as a somewhat beginner in Fusion, Is this an achievable model? Messing around with the free form tool is tricky, and wanted to know how I could get a start on the helmet. the base shape is my main concern. Thank you so much!

Yes, that helmet is achievable, but it is not a beginner project. You could use either solid or surface model approaches, I believe. Start with some good beginner training videos, including the Fusion ones here: https://help.autodesk.com/view/fusion360/ENU/courses/

I did not see you move the canvas image in the Y direction. I think that is the OP's question. The canvas will have to be placed on an offset workplane that can be moved in Y.
