You are trying to use a 3d Adaptive to do a "Rest Machining" operation, as it is a 3D  Adaptive it will of course machine all of whatever stock is still left to remove, that is what it does, use a different toolpath to do the "Rest Machining" of small areas, for example a "3D Pocket Clearing" or explore some other options 🙂
