Trying to slice a body at an angle, and relocate plane origins

Hello. I've got a couple of issues that are driving me nuts,and despite extensive googling I cant find how to do what should be a simple thing. I've been using fusion for a couple of months, so am still figuring stuff out, but am finding everything takes 10 times longer than in rhino.
So issue 1.
I have an organic shape I imported as a body, then needing to edit it, so I had to start a new file, convert it with Mesh to BRep, then move it back in. Now, I want to cut the head off it, using a curved cutter at an angle of (tbc) degrees.
In rhino, I would draw a curve, extrude it, rotate the surface, boolean split, easy.
In Fusion,not so much. (Red line shows what i want to acheive)
I drew the curve, but was unable to extrude this to be a surface and use that as a cutter . (I saw this done in a tutorial but I guess that feature has been removed, as extrude command simply refused to select an open curve). So I tried to use the curve with the split body tool, but this gave me no option to cut at an angle.
So to work around I created a construction plane, at an angle, using the red X axis as my selected line. But when I come to draw my curve, the Green Y axis of the new plane is nowhere near the green axis of the main assembly, so I have no way to centre or accuractely mirror my sketch curve. Selecting move pivot has no effect.
Below, you see the Main origin on the right (with a construction line along Y that for some reason I have to keep there to align and mirror things around) and the sketch origin is offset from it by an amount I cant seem to control.
So I guess question 1 is, am I going about this the right way? How to slice the head off?
and question 2. How do I align all my new components origins, sketches origins, construction plane origins and imported parts along the same Y axis, so things are actually aligned and symetical?
Would appreciate some sage advice from people that know this program better than me, because every time I use it this software does my nut with how argumentative it is. Not sure how much of this is me being relatively new to it, and how much is the software being completely unintuitive. I really want to like this program because my mechanical designs have outgrown rhino. Thanks!
