Splitting an uneven curve

Hello,

I am a Fusion-Beginer an I tried to look for a solution on Youtube and the internet, but I failed. 

So my problem is, that I want to cut along a uneven line.

 

I want to create a mold for my head. Therefore I scanned my head and I transferred it into Fusion, after that I switched the mesh into a solid body. After that I placed a box around my head, which will form my molds. My plan is that I split this box into 8 pieces. One cut was in the middle (vertical) of my head, then I want to have a cut under my chin and alongside my hat. But I can't figure it out, how to place a plane properly.

If you want the Forum users to take a shot, you will have to attach your model.  Please do so.  If you do not know how to attach your Fusion 360 model follow these easy steps. Open the model in Fusion 360, select the File menu, then Export and save as a F3D or F3Z file to your hard drive. Then use the Attachments section, of a forum post, to attach it.

No need for planes.  Just draw lines in a sketch and use those to split the mold.  Note: The lines don't need to be straight.
