Thanks for posting! I think I can address some of the confusion here.
First off, Sculpt mode works a little differently and will grey out the selection priority options. This is because, when the Sculpt workspace is active, Fusion sees this as an active command. When commands are active, Fusion limits you to sensible selection criteria.
An example of this outside of the Sculpt - if you begin an extrude command and then check your selection options, you'll only be able to select face priority. This is because the activation of the extrude command sets this automatically - you couldn't extrude an existing body, component, or edge, but you can extrude a face by moving its plane up or down.

In the sculpt workspace, the default selection is for edges, vertices, and faces. These are the types of geometry that you'd most likely be editing in the sculpt workspace. If you enter the sculpt commands, you'll see further automatic prioritization. For example, the "Sub-divide" command requires face selection and the "Insert Edge" command requires edge selection.
The "Edit Form" tool uses all types of selections and give the prioritization option in its dialog:

I mostly use selection priorities when in the model or patch workspaces - setting component priority could help with moving preselected components in an assembly and select edge could help preselect surface edges to extend.
