Trying to figure out how to join the three ends together at both ends. When I do joints it disconnects from the central ring. Not sure if this is even possible.

your question is a bit vague.  you can also attach a model by export as a .f3d file and attaching to a post

Can you File>Export your *.f3d file to your local drive and then Attach it here to a Reply?

Here it is. As you see there are 2 pins that the paddles need to attach to. Then there are 2 locking washers that I have hidden. I can do the washers I believe. I just haven't been able to figure out how to get the paddles to bend or if I have to create the geometry that way.

The only way possible to bend/unbend anything in Fusion is if it is a Sheet Metal body. And in order for that to even work, there must be at least one flat part of it.

So here I've made a sheet metal component with the desired curve, but a tiny flat area right in the middle where it touches the ring. Then did a circular pattern on that component so that there are three of them.

The natural state of them is bent, but they can be unfolded/refolded, and you can make a flat pattern of them.
