Modelling around 3D scan

Hi Guys,

Amateur user. Mainly designing and printing car parts. I need to make some custom bodywork: front spoiler wheel arches etc. Someone has kindly agreed to scan my existing bodywork for me to model around. I have been researching ways to deal with the generated scan data and model on it but there are lots of options and non seem perfect. I wanted to get a method sorted in my head before I start so I don't get stuck

 

My question is what would you consider the ideal way to deal with this?

I do not need to edit the scan/resultant mesh itself just use it to model around.

There are many videos on youtube dealing with meshes but you would start with, create mesh section sketch and then fit curves to section sketch.

you can also use the Pull command and Object Snap mode in Edit Form and Create Face to create a quick T-Spline approximation to the mesh surfaces:
