I have been unable to follow these instructions about converting text. I have not found a way for a right-click to give me that command. Any help?

You are trying to follow an Inventor video to do an operation in Fusion 360, no wonder you are having trouble. If you choose "Explode Text" (look in your posted right click menu screen capture) you will get close to the same result.
