This seems so simple, but I can't change the origin on my model. I want to rotate the model around the middle and change the model top and bottom. Any advise appreciated.

It appears that you want to rotate the object around a different pivot point. If I am understanding you correctly, have you tried the "Set Pivot" option in the "Move" dialog? It will allow you to set a custom pivot point for the transformation. Just don't forget to accept the pivot (click on the green check mark by the "Set Pivot" option) after you've redefined it.
