Advice for appropriate joint or fastener

I have never worked with joints and/or fasteners, and I was wondering if someone could point me in the right direction of what type of connection I would need? Apologies for the wonky animation, hah! I need these to print these two plastic flats in PETG, and I want them to be able to fold onto each other. I am open to external connections (metal), but ideally printed ones would be easier.

The fastener should not be bigger higher than the flat itself, as the flats will be used as guides for rolling out clay and help it into the right thickness. The height therefore of the connection should ideally be the same as the flats (2.5mm).
I am needing a connection because the surface of the printer (Prusa Mini) will not be big enough to print the length I require, hence my idea of connecting two flats together.
