Some remarks:
-There is no Aluminium in MM in the library only IN.
-No following picture for easy understanding of the idea\meaning of words as "Relief -shape\remnant\shape","Trim to band" etc.
I now check the result in each of the terms, not always succeed ..
-When output from drawing views in fusion to autocad, the scale changes.

You can make a new rule or edit an existing very quickly. You should start with a rule that matches the desired units.
If you're interested in seeing more default sheet metal rules added, the product management team is open to your feedback. However, the Fusion 360 IdeaStation is the best place to request a new feature or a feature enhancement.
The below link (Inventor Help files) contains a better visual reference that may help with the relief cuts. It's the same thing in Fusion 360.
For the other issue, the DWG generated by Fusion, creates a drawing view in the paper space in AutoCAD. Since the drawing views are scaled to start with in Fusion, I would expect them to be the same scale in AutoCAD. I'm not sure if this is what you mean by scale or not.
You can move from paper space to model space in AutoCAD using the EXPORTLAYOUT command. Then you may use the scale command in AutoCAD to adjust the size back to 1:1. Otherwise, you may consider inserting the 3D model into AutoCAD using IGES, STEP or SAT.
