In strictly UI design terms I don't know whether it's necessarily a great idea to clutter up the simulate dialog with options that're (sort of, kinda, maybe) available elsewhere, but I can definitely see how it would be convenient one.
The advantage is that (now that Simulate can remember settings) you could tick a box once in the dialog, and have it automatically hide the model every time you start a simulation & restore it as soon as you exit - and @Anonymous is right, it does seem like a logical addition to the tool/toolpath/stock toggles.
The best current alternative - scrolling to the top of a potentially long browser tree to toggle the (lightbulb? eye? eyebulb?) visibility button at the global or Models level - isn't difficult, but like the issue of (until recently) having to constantly enable stock visibility, it's a couple extra actions that compound into frustration when you find yourself going back and forth between modes a lot (usually as a result of struggling with something that's already causing a lot of frustration).
So I don't think it's a gamebreaker either way, but I can appreciate the convenience, so I'll give it an upvote.
