I'm trying to remodel the shell of the underlying Veritas car (3D scan). But I got stuck with the back of the car.

Any ideas how to prevent this? Is my toolchain not suited for such shapes?

Any hints are very appreciated. 🙂

Switch into box mode and you can already see that you have pulled some of the vertices too much so they created distorted quads.

I personally would not do this in Fusion 360 but in Blender. there you can use a couple of setting and the shrink-wrap modifier to model directly on to of the scanned .stl.

In Fusion 360 in order to snap vertices to geometry (Form tab: Modify->Pull) that geometry net to be surface or solid body. The scanned mesh is neither and has to be converted. Unfortunately it has way too many polygons to do so. You could attempt to reduce that polygon count, but will loose model  details in the process.
