Color 7 (which shows as black AND white) is one special color, that is the opposite of the background. So you can't use color 7 in that case. If you want to have anything real white you can use the true color tab and select e.g. 255,255,255 to get a clean white, but make sure in that case you are not working on white background, otherwise you would not see the text.

 

To your thread title:

AutoCAD's fonts do not have outlines, it's just one text with one color (no differentiating between outline color and filling color).

You might use ExpressTools function TXTEXP (>>>details<<<) to get outlines from a text (which needs a bit or reworking afterwards) ... that gives you separate outlines for your truetype font based text objects.
