I don't have time right now to actually write it, but it should be possible to write a lisp routine that would need to be run before you do the undo command. It would save the current view scale and coordinates of the view's corners. Then you'd do your undo operation and run the mating routine that would restore the view to the previously saved state.
It would probably be wise to also save and restore all the viewports on all the layout tabs.
