In Plotting in AutoCAD, you have the Window option:

with which you can visually define whatever area you want to Plot, independent of sheet size, whether a Layout is involved at all, etc.  Or, you can manipulate the display to show just what you want, and use the Display option there.

 

If those do not qualify as "visually defined," explain what you mean in greater detail.
