Should be able to use Layer Properties Manager, highlight the layers you want to plot again and select under the Plot column

Please specify AutoCAD for Mac version you are using and macOS installed on your Mac.
Can you share screenshot of the Layers Palette which shows this issue?

Looks like you have AutoCAD 2021 for Mac. Isn't it?
If so - then this version is not supported on macOS Sonoma, the latest version of macOS that supports AutoCAD 2021 for Mac is macOS Ventura.
You need to upgrade AutoCAD at least to 2022 version. If you are on subscription you can install AutoCAD 2025 for Mac, which is fully supported on macOS Sonoma.
