Once sidecar is setup can I use it as a second monitor with AutoCAD for Mac?

Yes, you can move AutoCAD window to a connected Sidecar device (iPad), but if you want to move Layers and Properties palettes to iPad, keep in mind that it is difficult to keep focus on these palettes when you move mouse from main display to iPad.
Plus when I tried Sidecar with palettes moved to iPad, Properties palette was practically inoperable: for example, drop-down lists did not work.
If you move the whole AutoCAD window to iPad with palettes docked, everything seems to work fine.
